While Okinawan soba varies in taste from restaurant to restaurant, this was the first time I'd been this surprised.
Above all, the soup that clings to the chewy noodles is irresistible! But it's amazing how it still tastes like authentic Miyako soba.
Miyako Island is home to numerous famous restaurants known for their Miyako soba noodles, but what is the secret to their deliciousness that even locals are drawn to?
I went to interview Nakayasu Shoten, a shop that's been getting a lot of buzz, even being featured in JTA's in-flight magazine in 2015!

1. Nakayasumi Shoten? It's a restaurant, you know?

Nakayasu Shoten was opened in 2014 by a chef who honed his skills in Japanese cuisine in Osaka.
Since then, not only local fans but also many tourists who heard about the place from hotel staff have started visiting.
At first glance, the name might not immediately suggest it's a diner, but as soon as you stand in front of the shop, you'll be greeted by the wonderful aroma of soup.

Upon entering, you'll find traditional Japanese-style seating and tables, creating a bright and welcoming atmosphere that makes it easy for even a woman to dine alone.
It seems that many famous people have visited after hearing rumors about the place, as there were rows and rows of autographs on display.
As the name of the shop suggests, it's the perfect place to take a break.

In addition to the main chicken ramen dish, the menu also offers set meals at reasonable prices.
According to locals, "Everything tastes delicious! You can eat until you're full."
But what travelers order most is"Chicken Miyako Soba"That's what I've heard.
The chicken rib and mini curry sets are also popular!
2. A flavor you've never experienced before! Miyako soba with chicken broth.

The broth for typical Miyako soba is made with 20% pork stock and 80% bonito stock, seasoned with salt, and apparently no other seasonings are used.
Nakayasu Aji Shoten's soup is based on chicken bones from Okinawa Prefecture, and is further enhanced with bonito flakes and vegetables from Miyako Island, as well as brown sugar and snow salt.

The homemade fresh noodles, boiled only after an order is placed, are thick and shaped in a style reminiscent of Miyako soba, and they hold the soup very well.
The soup is light yet flavorful, and you can drink it all without getting tired of it—it's the result of careful research!
3. Enjoy two benefits with our recommended way of eating it!

On the tables at Nakayasu Aji Shoten, you'll find not only Koregusu, a staple of Okinawan cuisine, but also pepper, chili oil, and other condiments.
We have a variety of condiments that you can add to your soba noodles, with the intention of letting you enjoy different variations...
First, I sip the broth without adding anything and eat it normally, then I add pepper to change the flavor.

Next, add some chili oil to enhance the flavor even more! It's surprisingly a good combination.
I usually prefer to eat noodles without any toppings, but I was so impressed by how delicious this made it – I'd say it's totally worth it!
It's just ordinary chili oil, but it feels like a magical spice that brings out the delicious flavor of chicken. I'm not exaggerating, it really does.

Now that we've finished our chicken ramen, it's time for the much-anticipated meal.
As many of you may have noticed, the menu included the phrase, "*Rice can be added to your soba."
The secret lies in the fact that after you finish the noodles, you can make chicken rice porridge with them!
Usually, Miyako soba comes with pickled ginger already on top, but now I finally understand why they serve it on a separate plate.

The rice, which has been patiently waiting to be turned into rice porridge, is added to the soup.
The soup, with the pepper and chili oil added by the time you finish the noodles, is perfectly mixed and goes wonderfully with rice!

Then, add the remaining pickled ginger and the chicken porridge is ready!
With just one sip, the rich soup becomes milder. Even women can easily finish it all.
Its mild flavor is sure to please even children.
You can get a large portion of rice for an extra 50 yen, so sharing it between parent and child is also an option!

The mini curry, which is often ordered as a set with Miyako soba, is quite spicy and has a strong, punchy flavor.
The chicken soba and rice porridge alone are substantial portions, but the curry here also has a rich, addictive flavor that's really good!
If you have room in your stomach, this is a dish I highly recommend you try.
