1. Okinawa Soba Mine is this kind of restaurant
Okinawa Soba Mine is an Okinawan soba restaurant located in Nanjo City. Its trademark is its red tiled roof, and it is characterized by its appearance that gives off an Okinawan atmosphere.

Stepping through the noren (traditional Japanese curtain), you'll find yourself in a warm and inviting interior filled with the comforting feel of wood. The warm-toned lighting and sunlight streaming in through the windows create a cozy and welcoming atmosphere. There are both tatami mat seats and table seats available, making it a comfortable option for families with small children.

I was surprised to learn that the tables and chairs in the shop were made by the owner, Mr. Akamine himself. It's clear that even though he's the owner of an Okinawan soba restaurant, he's also very particular about creating a comfortable space for his customers.

Besides the cozy atmosphere of the restaurant, the view you can enjoy while slurping your Okinawan soba is also not to be missed.

The only thing reflected in the square window is the breathtaking view of the sea and sky of Nanjo City. This scenery, which soothes the soul just by looking at it, is one of the reasons why Okinawa Soba Mine is so popular. The relaxing atmosphere of the restaurant and the breathtaking view make it a place where you can forget the hustle and bustle of everyday life.

2. Okinawa Soba Mine's Menu
At Okinawa Soba Mine, you can enjoy Okinawa soba made with meticulous attention to detail. There is absolutely no compromise on the broth, ingredients, or noodles. The noodles are handmade in the restaurant every day and aged overnight. The broth is made primarily from bonito flakes from Kagoshima and kelp from Hokkaido, and is also aged overnight.

The menu includes luxurious options such as the Mine Soba (¥1,430) which contains all the ingredients, the popular Mix Soba (¥1,150) which lets you enjoy soft bone pork ribs and braised pork belly, and the Super Hon Soki Soba (¥1,380) which is limited to 5 servings a day.

Even though it's simply called "Okinawa soba," you can enjoy a wide variety of dishes, from classic to unique. What's also unique is the system where you can choose your noodles. You can choose between "smooth noodles" and "chewy noodles," and even the same dish will have a different impression depending on the type of noodles you choose.
3. When you think of Okinawa Soba Mine, you think of mixed soba.
I decided to try the "Mixed Soba," the most popular dish at Okinawa Soba Mine. Both the rafute (braised pork belly) and soki (pork ribs) were voluminous and thick...! The generous portion size seemed to anticipate the desires of anyone who wants to eat both rafute and soki, and it was enough to get me excited.

The balance of soup, noodles, and meat was exquisite, making it hard to stop eating. The deep umami flavor made it a truly satisfying dish, and I finished it in no time. I also polished off the juicy rice I ordered as a side dish with the soba.

The "Super Authentic Soki Soba," limited to 5 servings per day, is an irresistible dish for fans of soft-bone soki soba. The approximately 30cm long soki (pork ribs) are truly impressive in their scale. The tender soft-bone soki, combined with the carefully crafted noodles and soup, is undeniably delicious. This is truly a dream menu item, allowing you to savor soft-bone soki to your heart's content. It's first-come, first-served, so you're lucky if you can order it.
