Yushi tofu is a specialty of Okinawa. It is characterized by its soft and fluffy texture, as it is made by adding nigari (magnesium chloride) to soy milk before it completely solidifies, allowing you to enjoy the original flavor of soybeans.
Whether you've never tried yushi tofu before or you've had it before, I'd like to recommend "Yushi Tofu and Local Fish Restaurant Ban's Shokudo" in Miyako Island.
The highlight of Buns Shokudo is undoubtedly the yushi tofu supervised by Hatsue Miyahira, a grandmother from Miyako Island. Made using traditional methods, it's packed with the blessings of Miyako Island.
Due to various circumstances, Buns Shokudo temporarily closed in August 2017. However, mail order sales of organically grown vegetables and other products continue, so please feel free to use this service if you are interested.

1. I want as many people as possible to try Yushi Tofu!

Hatsue Miyahira, a master of making yushi tofu.
This shop opened in May 2017. The inspiration for opening it came from the yushi tofu made by Hatsue Miyahira, a grandmother from Miyako Island. Hatsue's yushi tofu is absolutely delicious. The secret to making it so tasty lies in the "heat control" and the "timing of adding the nigari (coagulant)." It's a masterpiece that can only be made with many years of experience.

Exquisite homemade yushi tofu
The Miyahira family had long talked about wanting to open a yushi tofu shop so that everyone could enjoy it, and through a series of fortunate circumstances, they were able to start serving yushi tofu at Buns Shokudo.
The shop is open only for lunch on Thursdays and Fridays.
2. Narrow down the menu and focus on high-quality ingredients.
The menu at Buns Diner consists of only two items: "Tuna marinated rice bowl and yushi tofu set meal" or "Tuna steak and yushi tofu set meal," both priced at ¥850.

Because we only offer these two types, we are very particular about the materials we use.
The soybeans are, of course, domestically produced. While yushi tofu is often served with broth, the yushi tofu at Buns Shokudo is intentionally made without broth, resulting in a milder flavor. The tuna is also sourced from the waters off Miyako Island and purchased from the market that very morning.

Even the small side dishes that come with the set meal are carefully selected.
Actually, Buns Shokudo is run by Office Buns, a company headquartered in Aoyama, a fashionable town in Tokyo. Office Buns is also working on initiatives in Miyako Island with the theme of coexisting with nature. This is because the company president is from Miyako Island. "Buns" means "seasonal" in the Miyako Island dialect. The name reflects the desire to have customers enjoy seasonal ingredients as much as possible.
As part of their efforts, they run a farm, and the herbs and vegetables they harvest there are also served as small side dishes.
This farm cultivates its crops without using pesticides or chemical fertilizers, making it very safe and secure.
The farm cultivates a variety of produce, including holy basil, shiso, carrots, tomatoes, radishes, loofah, and chili peppers. Holy basil is used to flavor steaks, shiso as a condiment for pickled rice bowls, and carrots are used in salads with bitter melon. In short, we use what we harvest in season to cook with our produce.

3. We also offer and sell herbal teas from Buns Farm.
As mentioned earlier, Buns Farm also manufactures and sells herbal teas. Of course, they don't use pesticides or chemical fertilizers. They offer teas featuring Miyako Island's wild herbs, such as "Mutsuusa," as well as lemongrass and ginger lily, alongside their set meals. They are also currently working on packaging their teas.

Furthermore, the shape of the furrows at Buns Farm is very unique. They come in unusual shapes such as circles and keyholes.

If you'd like to take a tour, you can ask the shop staff, and they'll give you a guided tour.
If you're interested, you might want to listen to what they have to say.
4. Access Information

Buns Shokudo is located about halfway between Miyako Island's downtown area, Hirara town, and Miyako Airport, a 5-minute drive away. It's situated between the local shopping spot, Aeon Town Miyako Minami SC, and Koja Soba.
They're only open two days a week. If the timing is right, you should definitely go and try Grandma's amazing yushi tofu.
