SOBA EIBUN is an Okinawan soba restaurant located a short distance from Tsuboya Yachimun Street.
The pop art illustrations painted on the pure white walls are striking.
It has such a lovely appearance that you might mistake it for a cafe if you didn't know what it was.
This time, I visited "SOBA EIBUN" and tried their Okinawan soba.
We'll give you a complete overview, from the stylish atmosphere of the shop to the wide variety of menu items!

1. What kind of shop is "SOBA EIBUN"?
"SOBA EIBUN" is a relatively new establishment, having just opened in 2016.
The shop's name, EIBUN, is derived from the name of the owner, Eibun Nakamura.
You can enjoy Okinawan soba like you've never had before, and it's currently generating a lot of buzz in local media!
I visited during lunchtime on a weekday. I arrived before opening time, but there were already nearly 10 people there.
The restaurant opened after a 15-minute wait and was immediately full. It's so popular that there's a constant line of customers waiting! The capacity is 9 counter seats, 3 tables for 4 people, and 1 table for 2 people.
As I was visiting alone, I was shown to a counter seat by the window.
The wooden sculpture on the right side of the photo is designed to resemble a banyan tree, and is a carefully crafted interior piece made by the shop owner himself using driftwood. The shop, which makes extensive use of wood, has a warm and inviting atmosphere.
As I sat down and looked towards the back of the store, I spotted a self-service drink area.
It's nice that they offer tea and lemon water in addition to plain water.
They also have beautiful fans woven from grass, which will help cool you down after eating piping hot soba noodles.
There are condiments on the table, but they were also provided here.
All of them go well with Okinawa soba, and the pepper, sansho pepper, and masala... what an unusual combination!
This memo also includes a list of dishes that pair perfectly with this food, so please take a look if you're interested.
2. I deliberately ordered the classic "Okinawa Soba"!
SOBA EIBUN is famous for serving a slightly unusual Okinawan soba.
Let's take a look at the front of the menu right away!
There are roughly 14 different types of noodles alone, plus 3 types of Jushi (Okinawan mixed rice), making for an incredible lineup.
What sets "SOBA EIBUN" apart from other Okinawan soba restaurants is, without a doubt, the wide variety of noodles and toppings it offers.
There are 10 types of toppings, and for noodles, there are 3 types: raw, squid ink, and mugwort. You can also choose the portion size: large (250g), regular (180g), or small (90g).
It's like being able to customize your Okinawan soba freely, just like at a cafe.
The back side features a category for set menus. It's perfect for those who want to try a little bit of everything.
And what you should check is the blackboard located at the counter seats in front of the kitchen.
It's easy to overlook when you're seated at a table, but the special soba and dessert menus are listed here.
Don't forget the blackboard-exclusive toppings: mekabu seaweed, seasoned egg, and boiled bean sprouts—all for just 100 yen.
After much deliberation, I finally decided on the quintessential Okinawa soba, a regular size (700 yen including tax). Since I was there anyway, I upgraded to fresh noodles for an extra 100 yen.
After waiting about 10 minutes, my long-awaited Okinawa soba finally arrived. Island tofu was also included as a side dish.
First, I took a sip of the soup. The bonito flavor, which is characteristic of Okinawan soba, wasn't overpowering, and it was refreshing! It's no wonder there were no off-flavors, as they use first-press dashi from both bonito flakes and kelp.
The pork belly wasn't too sweet, and the just-right amount of fat seeped into the soup, adding to its flavor. The noodles were firm and chewy; I'm so glad I chose fresh noodles!
The chilled tofu served alongside is subtly seasoned with sesame oil, and you can enjoy the changing flavors as you mix it in little by little.
I ate the noodles, then the soup, then the pork belly, and before I knew it, I had finished everything.
I left the restaurant feeling pleasantly full, as if the meal had gently soothed my stomach.
3. Conclusion - Store Information -
I was in the store for about 30 minutes from the time I entered until I left, but when I went outside, the line still hadn't ended. It's incredibly popular.
Of all the Okinawan soba restaurants I've visited, this one had the most variety, and you can freely customize the toppings and noodles.
I felt that the charm of "SOBA EIBUN" lies in the fact that you can encounter a new type of soba no matter how many times you visit.
You can check out the latest blackboard menu described above on our official Facebook page ! Please take a look if you're interested.
If you're looking to try a type of Okinawan soba you've never had before, why not visit "SOBA EIBUN"?
